This easy-to-make and delicious recipe is from Gena Hamshaw's new cookbook Food 52 Vegan: 60 Vegetable-Driven Recipes for Any Kitchen. I would recommend doubling the spices (which include smoked paprika, chili powder, and dry mustard). I like to use garlic bread ciabatta buns—which takes the recipe up a notch—and avocado slices as a topping along with a squirt of lime juice.
