Beet and Feta Samosas

These delicious and unusual samosas are from Meera Sodha's Made in India: Recipes from an Indian Family Kitchen. They are lighter than standard samosas but still satisfying. We all loved them and they were very popular when I made them for a potluck. I have included a separate PDF from the cookbook on "how to make samosas". I found the instructions difficult to follow but there are lots of sites with alternative instructions.
