This hearty soup/stew from Anna Jones' Modern Way to Eat is delicious and satisfying. The soup, which includes Israeli couscous, is very tasty (and is reminiscent of minestrone) and the saffron yogurt, along with the rocket and pine nuts, add great flavour and texture. I used only a little saffron but, if you are not a fan, the recipe would be fine with plain yogurt.
