These amazing spring rolls—from Shelley Adam's Whitewater Cooks: Pure, Simple and Real—are a little finicky to make but well worth the effort. Do not put too much of the filling into each roll... the recipe indicates that it makes 16-24 but I ended up making 28. (You need 4 phyllo sheets for 8 rolls; the package I purchased contained 16 sheets so I had enough.) I used regular soya sauce with a little superior dark soya sauce.
