Françoise has been making these delicious and easy-to-put-together quesadillas from Bonnie Stern's Simply HeartSmart Cooking for years. I finally made them for Ethan and myself tonight. I used a combination of wheat and whole wheat quesadillas. I probably could have used smaller quesadillas but the big ones were fine. To make them a little lighter, just cut back on the white cheese.
